"When we are living in community, we become more open to one another. That’s the power of connection." On the heels of writing and directing the 2015 documentary film "PlantPure Nation", Nelson Campbell founded PlantPure Communities (PPC) in early 2016. Released in theaters in over 100 cities, the "PlantPure Nation" film (now on Amazon Prime) highlights the dramatic healing power of a plant-based diet and examines the political and economic factors that have suppressed information about these healing benefits, while making connections to public policy, medical practice, food deserts, and farming. As founder of PPC, Nelson continues to drive the strategic direction of the organization. PPC supports an international network of local support and advocacy groups called “Pods,” now involving more than 200,000 people, and is launching a grassroots and media-driven strategy to engage this network in bringing the plant-based nutrition message into local communities across the US. This strategy will be kicked off with the release of a sequel to PlantPure Nation called "From Food to Freedom", which Nelson wrote and directed. Katie and I were lucky enough to preview a viewing of this sequel and it was CAPTIVATING! Nelson and I discuss the impact of these two documentaries, the importance of connection within the plant-based community and what lies ahead for himself and his team. "Self-objectification is the invisible prison of picturing yourself being looked at instead of just fully living." Summertime often equates to sunshine and vacation and no school, right? But for a lot of people, it means hating their bodies because they don't look "beach ready". That's why Katie and I dedicate an episode every summer to encouraging self-love. "Symptom reduction only does so much." What is pain? What can people do if they have chronic pain? Is there hope for people who suffer from chronic pain? These are some of the questions we answer today with Dr. Tawny Kross, a chronic pain specialist and coach. "Make this change as early as possible in life. Don’t Walk. Run!" I can't believe I get to wake up everyday and have conversations with amazing people like Robin. This was such a fascinating conversation because Robin has been working to promote plant-based living for decades! Robin Jeep was a gourmet chef to the stars in LA when a serious accident in 2002 triggered gut health and autoimmune issues. Searching for answers she read Joel Fuhrman, MD’s #1 New York Times's best selling book, Eat To Live and transitioned to whole food plant-based eating in order to survive. "Diet culture is this pervasive belief that your body shape is more important than your physical physical and psychological well being" As a Registered Dietitian, intuitive eating is a huge part of my practice. This goes against the grain of what's been popular in society. Noom, Weight Watchers, Keto, SlimFast, billions of dollars gets thrown into diets. Diets and marketing that tell us, if we are smaller, we are better. If we are smaller, we are beautiful. It is part of my legacy, that I help my clients and my audience to realize how dangerous these beliefs about weight can be. I have brought Adrien, another experienced RD, to help me unpack diet culture and discuss why our mental and physical health is at risk. Adrien Paczosa (RD, LD, CDERD-S) has more than 20 years of experience working in the dietetic field with a focus on eating disorders, neurochemistry nutrition, and business development. In 2007, Paczosa founded and opened her first private practice in Austin, Texas called iLiveWell Nutrition. Paczosa combined evidence-based nutrition science with a compassionate approach to counseling patients to deliver health outcomes and improve patients’ day-to-day lives. "You don't have to be vegan to enjoy vegan food!" I am lucky enough to live in a city that boasts several vegan restaurants. However, 10 years ago, I could not make this same claim. "We all have to start somewhere" I am thrilled to welcome Kim Campbell, acclaimed author of three cookbooks: PlantPure Comfort Food Cookbook, PlantPure Nation Cookbook, and the PlantPure Kitchen Cookbook. "People are so sick and it has become so normal and you don’t know that it's not normal until you become healthy." Allison Clark was diagnosed with Hashimoto's Hypothyroidism more than 10 years ago and was struggling with symptoms despite being on medication. In January 2021, she transitioned to plant-based eating and immediately started seeing a decrease in severity of symptoms. A year and a half later, she learned her Hashimoto's had gone into remission! Through this journey it has become her mission to educate and empower women in their own thyroid health. She is now a health and wellness coach specializing in helping women with thyroid disorders through her business, Empowered Health. “Perfectionism refers to a set of self-defeating thoughts and behaviors aimed at reaching excessively high unrealistic goals. Perfectionism is often mistakenly seen in our society as desirable or even necessary for success. However, recent studies have shown that perfectionistic attitudes actually interfere with success. The desire to be perfect can rob you of a sense of personal satisfaction." "Our spouses, 4 children and 10 grandchildren are all plant-based" These two powerful women tell me their amazing story including: what it's like to collaborate with family, where beginners should start, the incredible benefits women in particular will benefit from a plant-based diet, and most importantly, what sets their amazing cookbook apart. Ann Crile Esselstyn graduated from Smith College and received a master’s in education from Wheelock College. She taught English and history for twenty-seven years, receiving the Hostatler Award for Outstanding Teaching, and was a field hockey coach for fifteen years. She juggled raising four children, teaching, and figuring out plant-based, oil-free ways to cook that are delicious and appealing. Since 2000, she has focused on creating recipes to prevent and reverse heart disease and counseling patients on how to prepare and eat plant-based foods. She has frequently been referred to as “the Julia Child of plant-based cooking.” Jane Esselstyn, R.N., is a wellness instructor and a plant-strong presenter and cook, as well as a married mother of three. She loves presenting about disease prevention through nutrition and, like the rest of her family, has been plant-strong for more than twenty-five years. She has been a sex education teacher to middle school boys and high school girls for more than two decades, and helps them learn about the amazing benefits of plant-based foods. "Being focused on purity does not help the animals." I am lucky enough to be in a community that is very vegan friendly. The Triangle owes the IG account Bull City Vegan and the woman behind this account, Leeanne Siart, a huge thank you for making our community great. I knew I had to have her on the podcast to find out why she does what she does. Bull City Vegan which was formed 12 years ago to promote vegan dining options in Durham NC including with the Bull City Vegan Challenge that challenged local chefs to add vegan options to their menus and diners voted on the best. The first step in tackling a food craving is understanding why it’s there. Ask yourself, “Why am I having this craving?” or “Where is this craving coming from?” Cravings are part of being human. They happen to each one of us at some point. Food cravings may feel frustrating, overwhelming like something you think you can’t control. "We’re told things are genetic, but we have also inherited dietary patterns and so things that seem inevitable aren’t always inevitable" If you are thinking about transitioning to plant-based, but haven't been able to take those first steps then this episode is for you! Today I welcome Erin, who has only been plant-based for a month, she is a newbie like so many of you out there listening. Her family enjoyed and celebrated a meat centric diet for a long time. But after a recent visit to the doctor, she found out that her and her husband's cholesterol was dangerously high. In order to avoid the same fate as family members on both sides, she dove head first into nutrition research and has transitioned her whole family onto a plant-based diet. Erin's enthusiasm is infectious and I can't wait to hear how many people she is about to inspire! Erin is an ordained clergy person in the United Methodist Church and CEO of REALNation, a virtual women's fitness community consisting of 280+ women around the world. Based out of London, Erin helps women nurture rhythms of self care while mentoring a team of female entrepreneurs creating high-impact coaching businesses of their own. Erin holds a B.A. in Political Science and a Master of Divinity degree from Duke University. Prior to her work in women’s health, Erin worked as a full-time nonprofit fundraiser and program director, serving in areas of prison ministry/reentry, community organizing, and raising $2 million in grant funding to help low-income families overcome unemployment and homelessness as a professional grant writer. "My doctor called me and said 'you have cured your diabetes'” Stories like J.T.'s are exactly the reason I started this podcast. Just like so many of us, J.T. did not grow up eating for nutrition. A self-proclaimed "starving artist", he would scarf down whatever food was available as he ran to his next acting gig. As he got older, he was diagnosed with high blood pressure, high cholesterol and diabetes. After adopting a plant-based diet, a mindful eating practice and incorporating gentle movement into his life, now at the age of 63, he has been able to shed over 50 pounds, reverse his diabetes, and cut his high blood pressure and cholesterol medications in half. His enthusiasm is infectious and I could have talked with him for hours! J.T. is an actor, with credits in films, TV, audio and the stage. He is also a teacher of Tai Chi, Qigong, and Meditation. "How we live and what we eat is more impactful in some ways than the genes we get passed down to us" Caitlyn Howarth shares her story that unfortunately begins with multiple family members dying of cancer, including her brother at the young age of 38. Naturally, Caitlyn wanted answers. She took a deep dive into her own research into what could have caused this and how can she prevent it from happening to her. She soon discovered plant-based eating. She was a typical American child and like so many of us grew up on a limited diet of mac & cheese and chicken nuggets. She is a self-proclaimed lifelong picky eater, never having eaten a squash or bell pepper up until recently. "I often chose cigarettes over having a meal" After years of living a self destructive lifestyle, suppressing his emotions, and a negative relationship with food, Koen Vaessen burnt out. "Weight and size are not indicators of health" I posted a Reel on Instagram several weeks ago and there was mention of the "Noom" program. It sparked a TON of questions from my followers so I thought I would make a podcast explaining the research I've done regarding the program and why I think they are the same old diet dressing up as something new. I go as far as to sign up for the program for the purpose of looking behind the curtain. I wanted to know what a prospective "Noom" consumer went through. What I found was shocking and upsetting. "Educating yourself can really help with finding your why and sticking to it" I LOVE reconnecting with former clients and Greta Heckmann is no exception. Greta's vegan transition was fueled by learning more and more about factory farming and really struggling with the cruelty of the system. She was also diagnosed with high-cholesterol even as a vegetarian. "It's great to be in a supportive group because there are so many questions that you need the answers to when you start." The popularity of vegan and plant-based lifestyles has EXPLODED in the UK over the last few years. Laura, a colleague of mine, wanted to make the transition, but she didn't have anyone in her social or familial circle to help her. That's where Veganuary came into the picture. Veganuary is a non-profit organization that encourages people worldwide to try vegan for January and beyond. During the 2021 campaign, more than 500,000 people took their pledge to try a vegan diet. Throughout the year, Veganuary encourages and supports people and businesses alike to move to a plant-based diet as a way of protecting the environment, preventing animal suffering, and improving the health of millions of people. If you find yourself to be the only one in your circle interested in this way of living it can feel isolating, lonely and overwhelming. "Taking your transition at your own pace is totally okay!" Double Trouble! Get ready ya'll because you get two plant-based dietitians this week! I am so excited to welcome, Lauren McNeill, a Registered Dietitian based in Canada who specializes in plant-based nutrition, with a Masters of Public Health in Nutrition and Dietetics and a collaborative specialization in women's health. Lauren started her plant-based journey by going vegetarian ten years ago, then slowly transitioned to veganism when studying nutrition in her undergraduate degree. "Theres more to being a plant-based athlete than I’m going to have salad everyday" Kim Teter is a certified Running and Health coach and lives in Annapolis, MD. Although not plant-based herself, she has helped her husband with his athletic goals over the last 7 years, which include 2 Ironman races. Kim shares with me how she plans and organizes meals for herself and her husband in order to fuel their athletic pursuits which include endurance running. "I think sometimes people want to overcomplicate I’m vegan and I’m pregnant" Holly MacKinnon is the founder of Small Seed, a plant based snack company whose mission is to use food as a way of leaving a positive impact on the world. She lives in Raleigh, NC with her husband (and co-founder), daughter and soon-to-be son. She has successfully had two vegan pregnancies and is now raising vegan children. Today, we discuss common questions vegan mothers get while pregnant, how to deal with the opinion of others, how to find a doctor and much much more! For Holly, going vegan was a pretty quick and easy journey. After making the connection that we raise and slaughter animals for (unnecessary) consumption and never truly enjoying any animal products, she wanted to give veganim a try. Holly says, "I realized if I couldn't look an animal in the eyes and take it's life, why did I deserve to have someone else do the messy hard part for me." "There's a huge misconception that when we look at someone its an automatic indicator of how healthy they are" Welcome, Rachel Jones, one of my former clients who is a stay at home mom of three. Rachel was diagnosed with a Chronic Kidney Disease (IgA Nephropathy) at the age of 26. She has also struggled with being overweight almost her whole life and when she met me, her main focus was to get the weight down. What happened instead was to change her mindset around the obsession over weighing herself and the "number" on the scale. Today, Rachel's kidney disease is in remission. She has combined her love of vegan/plant-based cooking and photography after receiving a food photography scholarship. Rachel is hoping to spread the message that plant-based/vegan eating is accessible, abundant and beautiful. This is an amazing conversation that could have continued for hours. It is an episode full of information and pearls of wisdom and Rachel's passion and enthusiasm are infectious. I know you will love her as much as I do. "If we can address these stereotypes and gender norms when kids are young maybe we can prevent them from thinking that meat is masculine in the first place." I am thrilled to host my friend, Adam Stranaland, to the podcast where we discuss an age old question, "does meat equal masculinity? Adam is a doctoral student at Duke University, pursuing Duke’s first joint degree in psychology and public policy. His research aims to understand how powerful social norms impact kids and adults, as well as if/how we can change them. Most of his research is on the causes and consequences of rigid masculinity norms and how they affect boys’ and men’s development and behavior (e.g., aggression/violence, political engagement, mental health, discrimination). Capri shares her health struggles that all started with strange menstrual cycles and bowel problems for as long as she can remember. These issues escalated into constant, wide spread abdominal pain that went undiagnosed for years. After multiple procedures, surgeries, scans, and doctors, she was finally diagnosed and treated for endometriosis. During the 9 years of increasing pain, she dove head first into finding answers. Thank you so much for being here today. I’m Ashley. I’m a plant-based registered dietitian nutritionist and virtual nutrition coach and mentor. I’m so grateful you’re here. I’m going to give you an exciting preview of what you can expect from this podcast, how it will benefit you and your journey, and stay tuned at the end for a fun giveaway that I’ll be running throughout this month of May. The whole reason I’m starting this podcast is give people a space to share their plant-based story. And we’re not just going to talk about what’s going well (although we’ll do a lot of that) but we’re going to really dig deep into the challenges, struggles… What would you say to yourself if you could go back and give yourself a piece of advice as you started going plant-based. When I started my plant-based journey in 2012. At that time, I was very alone in my journey. I had no support and no idea what I was doing. Some of my main inspirations and motivators were reading about everyday people who made the shift. I was raised on a beef farm so I seriously had no clue what I was doing. The whole reason I became interested in plant-based eating was because I grew up with a lot of GI issues. And looking back now, I didn’t realize that going to the bathroom once or twice a week wasn’t normal. I would spend hours trying to go to the bathroom and didn’t realize it wasn’t normal. It wasn’t until after I became a dietitian, and I always stress that it was after because I didn’t learn a whole lot about plant-based eating You can expect to hear stories from people who made the switch, from why they did it to what they struggled with to how they’re thriving now. Why? Because, I don’t want you to feel alone on your journey. I want you to have a community, to have some support through your earbuds that I wish I had. Even though this episode is solo, you can expect most of these episodes to be other people talking about their plant-based journey.
